Providing Baked Goods for People with Food Allergies
The Health Nut Bakery began with the vision of our founder, Kerri Lawless, who was dedicated to finding dietary solutions for her son, Jesse.
Like so many parents, she researched tirelessly and endlessly looking for solutions to symptoms Jesse was exhibiting. Those symptoms ranged from erradic behavior, to debilitating stomach pains, and on and on. Only a parent can know how difficult it is to watch their child suffer and not know what to do.
After a physician suggested that she take her son off of all foods containing gluten, casein and sugar, Kerri had a serious challenge ahead of her… To find foods free of these allergens that a two year old would actually eat. Everything she found either contained sugar or, because of taste or texture, Jesse just wouldn’t eat it. Kerri recalls “My kitchen had never been such a mess! There was a plethora of baking experiments gone array.” After countless hours of research, staying up night after night and throwing away so many nights work because no one would eat it, she finally came up with some really great tasting recipes.
Not only suitable for her son, but also for dieters, diabetics and anyone wanting a delicious, convenient health snack or breakfast. Friends and family began making so many requests for more muffins and cookies, that Kerri saw there was truly a need in the market for these delicious baked goodies.
And there you have it. The Health Nut Bakery was born!
