Gluten Free Cookie Recipes


Baked with Almond Flour

Almond Cookies

3 C Almond Flour

¼ tsp Sea Salt

¼ tsp Baking Soda

½ C Swerve *

¼ C Canola Oil

2 tsp Vanilla Extract

2 tsp Almond Extract

2  Egg Whites

½ C Slivered Almonds

Combine ingredients until a slightly sticky dough forms.  Spoon a tablespoon size ball of dough onto a cookie sheet for each cookie.  Press several almond slivers on top and flatten to desired height. Bake at 325 degrees for 15-17 minutes.  Recipe makes 25-30 cookies.  Best kept in freezer for longest shelf life.

*if desired, replace with another sugar substitute equivalent to ½ cup sugar.

Gingerbread Cookies

3 C Almond Flour

¼ tsp Baking Soda

½ tsp Ginger  

½ tsp Allspice 

½ tsp Nutmeg 

½ C Swerve *

¼ C Canola Oil

2 tsp Vanilla Extract

2  Egg Whites
