Gluten Free Muffin Recipes
Bake with Almond Flour
Our Recipes:
Apple Cinnamon Muffins
2 ½ C Almond Flour
½ C Swerve *
1 tsp Cinnamon
¼ tsp Salt
1 T Baking Powder
½ tsp Baking Soda
3 Large Eggs
2 tsp Vanilla
1/8 C Canola Oil
½ tsp Apple Cider Vinegar
½ C Apple (Peeled and Diced)
Mix dry ingredients in large bowl. In separate bowl, mix wet ingredients. Stir wet ingredients into dry and mix until blended. (Do not overmix) Scoop into muffin cups and bake at 350 degrees for approximately 20 minutes. Makes 12. Best kept in freezer for longest shelf life.
*may use another sugar substitute equivalent to ½ cup sugar.

Banana Nut Muffins
2 ½ C Almond Flour

1 Banana (Mashed)
½ C Chopped Walnuts
Mix dry ingredients in large bowl. In separate bowl, mix wet ingredients. Stir wet ingredients into dry and mix until blended. (Do not overmix) Scoop into muffin cups and bake at 350 degrees for approximately 20 minutes. Makes 12. Best kept in freezer for longest shelf life.
